Ginseng Chicken Soup

This recipe supports immunity and energizes the body.


20 g astragalus (huang qi)
12 g dried ginseng (ren shen) preferably sliced
12 g jujube fruit (da zao), seeded
2 tablespoons (15 grams) goji berries (gou qi zi)
1 pounds chicken pieces (purchased as drumsticks, thighs, etc. or chopped from ½ chicken)
8 cups water
½ teaspoon salt, or to taste
2 tablespoons Coconut Aminos (soy-free seasoning sauce as substitute for soy sauce)


  1. Soak the dried ginseng slices for 1 hour at room temperature, then drain.
  2. In a large pot, combine the astragalus, ginseng, jujube fruit, goji berries, and chicken and bring to a boil. Skim off any excess oil or fat.
  3. Lower the heat and simmer, covered for 1 hour.
  4. Add salt and/or Coconut Aminos to taste, if desired.
